Steering wheel alignment help

Merry Christmas yall,

So after I replaced stock exhaust headers for some jba shorties, I noticed an increase in engine noise and scoured the internet. Apparently, the steering shaft boot is prone to rip (rubber) and lo and behold, mine is ripped to pieces. I used this as a guide:

My steering column was so rusted , any match mark I made was erased by pblaster and brake clean, so here I am now with the steering wheel being slightly off center. I disassembled it a few times (easier now with a good amount of the rust scraped off ) but still cant get it perfectly set in the middle. My brain is a little fried and my fingers are a little numb from the cold . Anybody have any tips or pointers? Thanks.
